In refrigerated pate case observed opened packages of foie gras. One package had a sell by date of 1/3/26 and another package had a sell by date of 12/27/2025. Two other opened packages were not dated. The exact date the packaging was opened could not be determined after discussion with the person in charge. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made/ removed from packaging as day 1). All opened pates/ foie gras were discarded at time of inspection. After discussion with the person in charge, it has been determined that the root cause of the violation was training staff (a policy issue, verification breakdown), which resulted in the violation. Observed refrigerated pizza make table with an ambient temperature of 54*F. The unit contained TCS items including shredded mozzarella cheese, sliced pepperoni, cooked diced bacon, cooked dice ham, cooked chopped sausage, diced tomatoes, and Burrata cheese. The temperatures of the items ranged from 50-51*F. The person in charge did not know how long the product had been in the unit. no temperature log was available for unit on the day of inspection. The person in charge voluntarily discarded all TCS items at time of inspection. Discussed with the person in charge that the temperature of the unit should be maintained at 41*F or below when cold holding. Corrective Action: Corrected at time of inspection.

Observed large 6 inch deep covered lexan of tuna cranberry salad in walk-in cooler. With inspector probe thermometer the product measured 46*F. The person in charge stated that it was made approximately 3 hours prior to inspection. The person in charge had staff uncover product and spread into shallow pans to continue the cooling process. Discussed with the person in charge that when cooling, the proper methods include: Placing food in shallow pans, separating the food into smaller or thinner portions, using rapid cooling equipment (i.e. a blast chiller), stirring the food in a container placed in an ice water bath, using containers that facilitate heat transfer, or adding ice as an ingredient.
