In warming cabinet by the ice machine observed a container of beef cheeks/54°F and a container of pomodoro sauce/122°F. In the holding oven near the grill observed a container of short ribs/100°F. Observed warmers were set to 140°F.

After discussion with the person in charge it was determined all TCS foods were placed in the warmers an hour ago. Predefined Comment: All TCS foods improperly hot held were reheated to 165°F at time of inspection. Discussed reheating procedures. Ensure TCS foods are reheated to 165°F for 15 seconds rapidly (less than 2 hours) prior to hot holding. Corrective Action: Corrected at time of inspection.

In small single door prep refrigerator at the pasta station observed minimum ambient temperature of 47.6°F with inspector's min/ max thermometer. Observed a container of cooked squash/55°F, burrata cheese/46°F, cooked broccoli/51°F, and multiple containers of compound butter/49-51°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. After discussion with the person in charge it was determined all TCS foods were placed in the unit around 4PM.

Observed Branzino and Salmon on the menu with an asterisk by the item that identifies the food as a product that can be undercooked. Chef stated that there is no parasite destruction on file for either of these species. Discussed with Chef that any fish with the exception of tuna that is prepared undercooked needs to have documentation that states the fish has been treated for parasites. A re-inspection will be completed on August 1st. Corrective Action: Correct prior to re-inspection.

Chef had staff remove and place into ice bath with ice wands at time of inspection to continue to properly cool the product to 41*F or below. Discussed with Chef that acceptable methods of cooling include: Placing food in shallow pans, separating the food into smaller or thinner portions, using rapid cooling equipment (i.e. a blast chiller), stirring the food in a container placed in an ice water bath, using containers that facilitate heat transfer. o Adding ice as an ingredient.
