Rotisserie chickens are maintained using time as a control, items out for sale did not have make times documented. Person in charge said items were put out over 4 hours prior. Current items were discarded and new chicken make times were documented on log. Please ensure all food items maintained using time as a control have make times documented to ensure they are discarded after 4 hours. Corrective Action: Corrected at time of inspection.
