Inspector's notes

Observed lowboy cooler under the espresso machine with ambient temperature of 61°F measured via min/max thermometer. Internal temperature of milk and heavy cream is in the range of 58-60°F. Informed person in charge (PIC) that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. PIC states the products have been in the cooler for over 4 hours. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection. Repeat violation: 2nd.
