Observed cut watermelon at the bar with the garnishes on the counter and on the ice well with temperatures of 63-65*F, placed out at 7:30am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.

Tag indicated that it had been prepared about 14 hours prior, item was not recorded on cooling log to verify and was discarded at time. Please ensure all time/temperature controlled for safety (TCS) food items are cooled from 135 to 70 degrees F in no more than 2 hours, and all the way down to 41 degrees F in no more than an additional 4 hours (6 hours total). Corrective Action: Corrected at time of inspection. Second consecutive violation.
