For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. --Internal temperatures of all time/temperature control for safety (TCS) food items in the open air deli meat/cheese refrigerator on the east side of the store measured between 45°F-52°F. Thermometer was calibrated on site. These items included various deli meats, raw meats, various cheeses, and other various dairy based products. All items stocked less than 2 hours prior to inspection were moved into the walk-in refrigerator to rapidly cool. Items in the unit for more than 2 hours were voluntarily discarded, see embargo form. Reviewed cold holding requirements and temperature monitoring procedures with the person in charge (PIC). After discussion with the manager, this violation occurred due to a lack of verification. PIC placed a work order for the unit at time of inspection. All TCS food items were removed and will not be re-stocked until the refrigerator is repaired. Reviewed cold holding equipment requirements with the PIC to ensure foods can be maintained at or below 41°F while cold holding. After discussion with the manager, this violation occurred due to a lack of verification. Re-inspection will take place within 72 hours to verify proper temperature.
