#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

**2nd repeat** Observed chicken wings, grilled and fried chicken, and fried potato wedges hot holding near the center of the hot case with internal temperatures ranging from 110-130*F when measured with a probe thermometer. According to person in charge and temperature log, all items had been cooked and placed in the case less than 2 hours prior. Because the hot case was already turned to the highest setting, discussed adding items like wings and chicken pieces to the time as control policy until hot case can reliably hot hold TCS foods at 135*F or above. All items were recorded to be discarded after 4 hours from the time they were put in the hot case. Corrective Action: Corrected at time of inspection.
