Inspector's notes

Observed tomato sauce, pepperoni, cooked ham, cooked chicken, cooked Italian sausage, cooked meatballs, mozzarella balls, shredded cheese, and cream sauce in tabletop cooler at 46-53 °F. Person in charge (PIC) stated that foods had been placed in tabletop cooler from the walk-in during lunch between two and three hours prior. Observed tomato sauce in reach-in cooler under prep area counter at 46 °F. PIC stated that tomato sauce had been placed in reach-in cooler around six hours prior. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held for under 4 hours were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. All TCS foods improperly cold held for over 4 hours were discarded by PIC at time of inspection. Repeat violation: 2nd. Corrective Action: Corrected at time of inspection.
