Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC rapidly recooled food product in walk in cooler to 41F and below. Observed wiping cloths sitting out on counters in the main kitchen area at reach in cooler cutting station across from grill, and sitting on both counters in the kitchen area across from freezer walk in. All wet wiping cloths must be stored in sanitizer buckets with approved sanitizer concentrations. Wiping cloths were placed in sanitizer buckets with approved sanitizer concentrations at time of inspection. Corrective Action: Corrected at time of inspection. PIC placed wiping cloths in chlorine sanitizer between 50-100ppm.

When hot food goes into the walk in cooler, always use shallow pans, leave uncovered, utilize the freezer and once the product reaches 41*F in 6 hours or less than you can cover.
