Observed unclean floor by drain next to ice machine and old food debris along floor/wall junction by wire rack and beverage cooler. Floors are to be cleaned at regular intervals to prevent the build up of food and other debris. Corrective Action: Correct prior to next routine inspection. 6-201.11 - Core: Floors, Walls and Ceilings-Cleanability Addl Notes: Observed cracked tiles and missing tile on floor in area by walk in freezers. Observed that chlorine based sanitizer for dishes was greater than 200 ppm. Chlorine based sanitizers for dishes must be at 50 ppm. Water was removed and new sanitizer water was filled to be at 50 ppm. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Corrective Action: Corrected at time of inspection.
