Observed quat sanitizer dispensing from the automatic dispenser above 500 PPM. Alerted manage who diluted the solution with water to the approved concentration at time of inspection. Discussed approved use of sanitizers with the person-in-charge (PIC). Sanitizer must be used at concentrations and in an approved manner per manufacturer instructions, 40 CFR 180.940, and 40 CFR 180.2020. Establishment to continue diluting the solution with water to the approved concentration until they can have the wall dispenser serviced. Corrective Action: Corrected at time of inspection.

Observed large soup ladles in standing water (88°F) by the cook station. Also observed clean knives stored between prep tables. Alerted manager and discussed proper storage of between use utensils. Corrective Action: Corrected at time of inspection. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. All in-use utensils were properly stored at time of inspection. Observed item in the walk in cooler greater than 41*F (Cooked/cooled goat meat 47*F, biryani rice 45*F, and white rice (45*F). Cold hold of food are to be at 41*F or lower when stored. As per the person in charge the goat meat was cooked on Tuesday 5/6/2025 and the rice were prepared on 5/7/2025). Items were embargoed and discarded. Advised staff to cool items uncovered and in shallow containers, also to verify cold hold temperatures are at 41*F with a metal stem thermometer. Corrective Action: Corrected at time of inspection.
