#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

Sliced roast beef hot holding in trays with internal temperature of 128-138*F. Temperatures verified with PIC's and inspector's calibrated probe thermometers. The roast beef had been placed in the hot tray about 30 minutes ago according to the timer for the tray. PIC discarded the front portion of the roast beef which was the portion that had the lowest temperatures. About halfway into the tray a temperature of 135*F or above was observable. Lunch rush had just ended and the trays may have been opened so frequently that it cause the roast beef in the front portion of the tray to drop in temperature. Discussed time as a control written policy requirements.

Inspector's notes

-- Observed containers of Swiss cheese, American cheese, cheddar cheese, sliced tomatoes, sliced brisket, and sliced turkey with internal temperatures ranging from 49°F-62°F using probing thermometer. The person in charge (PIC) stated the items were removed from the walk-in refrigerator and placed in prep cooler approximately 1 hour prior to the inspection. At the time of inspection, all TCS items improperly cold held were submerged in ice baths in prep cooler to rapidly cool to 41°F.
