Inspector's notes
Observed in walk-in a container of pooled eggs above raw shell eggs. Also observed containers of salsa next to a container of raw meat. Discussed with person in charge (PIC) the proper food storage in cold holding units chart as they had one on the door of the walk-in. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed the inside of the Diet Pepsi nozzle with a buildup of food residue and organic matter. In equipment such as ice bins and beverage dispensing nozzles, it must be cleaned at a frequency necessary to preclude accumulation of soil or mold.
