In the rear half of the steam table, observed gravy/83F, mashed potatoes/89F and marinara/70F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. It was determined that the unit was not operating correctly. All TCS foods improperly hot held were voluntarily discarded by PIC at time of inspection.

In prep cooler/40F on the line, observed TCS food, including hard boiled eggs, cut lettuce, guacamole with tomatoes, diced tomatoes, and cheese, holding at 43-48F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. All TCS foods improperly cold held were, per PIC, within safe time holding parameters and were placed in ice baths or relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Repair service technician arrived during inspection to service the unit. Corrective Action: Corrected at time of inspection.
