Observed an employee washing hands with gloves on and then proceeding to grab utensils with the gloves still on. Additionally observed employee handling food with torn gloves. Had employees remove gloves, properly wash hands and put on new gloves. Discussed with PIC that gloves should be used for only one task, such as working with RTE food or with raw animal food, used for no other purpose and discarded when damaged, soiled, or when interruptions occur in the operation. Observed sanitizer buckets by the soup warmers and the hostess station with a chlorine sanitizer concentration < 50ppm. All chlorine-based sanitizers must have a concentration of 50-100ppm in order to properly sanitize food contact surfaces. The PIC changed the buckets out to correct concentration. Observed shredded crab in a metal bowl wrapped tight with plastic wrap with a temperature of 47F. The PIC indicated that the crab was used during prep 3 hours prior to inspection. All TCS foods prepared at ambient temperature must be cooled in a manner that allows for rapid cooling. Discussed with PIC about keeping plastic loose during the cooling practice.
