For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4621/AMC-Toolbox---Cross-Contamination.>>>The establishment only sells pre-packaged hermetically sealed packages of raw meats. Observed packages of raw chicken store over packages of raw Al Pastor Pork. Also observed packages of ground beef stored directly above whole intact cuts of beef. Also observed packages of raw ground pork products stored directly above packages of whole pork loin. Discussed with person in charge vertically separating packages of meat by their final cooking temperatures; meats that need a higher final cook temperature must be stored lower than those that need a lower final cook temperature due to risk of spillage if packages leaked. Guidance emailed. Correct By: Correct Prior To Next Routine Inspection
