-- Multiple frozen food items such as hamburger patties, tater tots, sweet potato fries and regular fries were softened in reach-in freezer near fryers. Internal temperature of foods measured between 35°F-37°F using probing thermometer and the ambient temperature measured at 41.1°F using min/max thermometer. Stored frozen foods shall be maintained frozen unless in the process of slacking or thawing. Requested the PIC place items in walk-in freezer at the time of inspection. Corrective Action: Corrected at time of inspection.

The establishment is renting a refrigerated truck for a minimum of 7 days while awaiting additional repairs to the walk-in refrigerator. Verified ambient temperature of refrigerated truck maintained temperatures at 39°F or below. All TCS foods were cold holding at 41°F or less at the time of re-inspection. The PIC will notify MCESD once the walk-in refrigerator is repaired.

Inspector's notes

-- In walk-in refrigerator, observed approximately 6" deep plastic container of sausage gravy with internal temperatures ranging between 85°F-110°F using probing thermometer. The PIC stated the item was removed from hot holding and placed in the walk-in refrigerator to cool over 2 hours prior to the inspection (around 9:30 AM). All TCS foods improperly cooled were discarded by PIC at time of inspection. Cooked TCS foods must be cooled from 135°F to 70°F within 2 hours, and from 70°F to 41°F within 4 hours for a total of 6 hours for cooling. Corrective Action: Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

-- In walk-in refrigerator, observed multiple packages of sliced turkey, sliced ham, pork sausage patties, sharp cheddar cheese, Swiss cheese, cut cabbage slaw mix, cut tomatoes, diced potatoes, chorizo, and raw beef tenderloin with internal temperatures ranging between 45°F-52°F. The ambient temperature of walk-in refrigerator measured at 52.3°F using min/max thermometer. The PIC stated a food safety temperature check was completed about 2 hours prior to the inspection, the ambient temperature of the walk-in refrigerator was 34°F, and all TCS foods were cold holding at 41°F or less. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
