#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed hard boiled eggs, yogurt, and milk on the breakfast self-service line with internal temperatures between 47 and 56 degrees Fahrenheit. PIC added more ice and water to the containers to bring the temperature of the food products down. Items had been there approximately 1 hour prior to inspection. TCS foods shall be kept at 41 degrees Fahrenheit or below to prevent microbial growth. Discussed other option of using time as a control for food safety. Corrective Action: Corrected at time of inspection.
