Observed various Time/Temperature Control for Safety (TCS) food items including sliced cheese, milk, and cut tomatoes in the walk-in refrigerator registering internal temperatures ranging between 48°-49°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. The walk-in cooler registered an ambient air temperature of 49°F. Per manager, the walk-in cooler was observed to be holding at 34°F this morning around 6am. The food items were still within adequate time/temperature parameters. Instructed manager to open the adjacent, connected walk-in freezer to help cool food items in refrigerator. Corrective Action: Corrected at time of inspection.

Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Instructed manager to open the adjacent, connected walk-in freezer to cool the walk-in refrigerator. Manager contacted repair services and estimate being out on site within the next few hours.
