Observed accumulation of dirt, dust, and other food debris along the floor underneath product storage racks and along the A/C fans inside the walk-in refrigerator. The establishment shall clean the walk-in refrigerator at a frequency to prevent the accumulation of dirt, dust, and other food debris. Corrective Action: Correct prior to next routine inspection. 6-501.11 - Core: Repairing -Premises, Structures, Attachments, and Fixtures-Methods Addl Notes: Observed a large hole in the wall of the dry storage room located just off of the kitchen area. In addition, observed a light switch without a faceplate covering it in the same room. The establishment shall repair any holes in the walls of the building to prevent any potential harborage of pests. Corrective Action: Correct prior to next routine inspection.

Per manager, the ice machine used to be located in a different area of the establishment and was moved roughly 10 years prior. If hand washing deficiencies are observed, the establishment may be required to install a hand sink near the ice machine.

Received an email from the manager stating that the establishment will wash, rinse, and sanitize the internal food contact surfaces of the f'real machine every 4 hours per the code requirements. The manager also stated that they obtained a log book to record each of the cleanings on a 4 hour interval to ensure that the task is completed properly and per the code requirements. No variance will be required for alternative cleaning schedule of the f'real machine, as long as this cleaning procedure is followed. This advisory will satisfy the re-inspection requirement for the violation documented on the routine inspection from 11/28/23.No County legal action will result from this inspection.

Observed mozzarella cheese, pizza sauce, sliced deli ham, and precooked pork sausage crumbles with internal temperature ranging from 50-54 degrees Fahrenheit in top compartment of prep-style refrigerator used for pizza. Please ensure time-and-temperature control for safety (TCS) foods are kept cold at 41F or colder. Ambient air temperature of unit was measured at 46F with min-max thermometer. Per manager, pizza toppings were placed in unit less than 2 hours prior to inspection. Pizza toppings and other TCS items in unit were moved to alternative prep-style refrigerator during the inspection to correct. Unit that was not holding cold is not critical piece of refrigeration and establishment has sufficient cold- holding capacity for remaining TCS foods. Unit that is not holding cold shall not be used to store TCS foods until repairs are completed. Correct By: Corrected At Time Of Inspection
