Discussed continuing to make repairs about the following topics with the owner: 1) repairing/replacing sections of wall with missing or damaged rubber cove base 2) repairing sections of wall in the men's restroom and in the kitchen near the 3-compartment sink that have been cut out for previous repairs 3) repairing plumbing at the hand sink near the entrance of the restaurant.
Inspector's notes
At the time of inspection there was not a Certified Food Protection Manager on site. The establishment has an expired certificate on the wall belonging to the owner. Per manager, they are not aware of any other employees having the certification. A Certified Food Protection Manager (CFPM) is required to be on the premises during all hours of operation. Corrective Action: Correct prior to next routine inspection.

In addition, observed the plumbing underneath the women's restrooms made of "accordion-style" plastic. All plumbing shall be of durable, rigid material. Observed multiple cooked, perishable food items including cooked salsas, beans, and rice in the walk-in refrigerator registering internal temperatures ranging from 48°-52°F. Per manager, the food items were cooked and placed in the walk-in the day prior. The establishment shall cool their cooked, perishable food items from 135°-70° within 2 hours and from 70°-41°F within an additional 4 hours. The manager voluntarily discarded the food items at the time of inspection. Discussed alternative means of cooling with manager including ice wands, ice baths, smaller containers, and placing pans uncovered near the top shelf in the walk-in refrigerator.
