Corrective Action: Corrected at time of inspection. Raw beef, cooked noodles, and milk in the tall Continental reach-in at 48-53*F internally. Milk had been out of temperature for unknown time, was embargoed and discarded by the manager. The other TCS items had been in the unit less than two hours, per manager, and were moved to the walk-in to re-cool. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

In the front steam wells, shrimp and eggrolls at 109*F and 122*F internally. Cooked chicken held above the fryer at 98*F internally. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Manager placed the eggrolls and shrimp on the hot wells under time control with proper discard and reheated the chicken to 165°F at time of inspection.
