Inspector's notes

Corrective Action: Corrected at time of inspection. Whipping cream in in-use insulated carafe at 53*F internally. Manager stated the carafe had been made more than 7 hours before and was stored in a reach-in. Embargoed, employee discarded. Discussed allowing the insulated carafes to re-cool completely before being filled and charged. Also discussed hand washing the carafes instead of using the high temperature dishwasher. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.
