Inspector's notes

At time of inspection, observed two metal containers of meatballs hot holding with internal temperature of 104-120 degrees F and observed 1 metal container of potato soup with internal temperature of 127-129 degrees F. Person in charge (PIC) stated items reheated to 165 and placed in hot holding about 30 mins prior. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

At sandwich line, observed meatballs being held using time as a control with no indicated discard time. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Person in charge (PIC) stated items were placed at 12pm. All TCS foods being held under time as a control were properly time stamped at time of inspection. Corrective Action: Corrected at time of inspection. Deli meats, cheeses, tuna salad, cooked onions, mac and cheese and bacon in right side cold table at 44*F to 50*F internally. TCS foods in unit less than two hours were moved to other coolers to re-cool, TCS items in unit more than two hours were embargoed and manager discarded. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below.

All items noted in the last report had been addressed.However, noted there are copper pipe downstream from the RPZ of the soda carbonator. Please remove the copper pipes and replace with PEX lines for the water connection from downstream of the RPZ. Also noted the floor sink for the soda carbonator has standing water in it. it is not overflowing at the time of inspection. Manager was checking out the floor sink at the time of inspection. E&D, class 3 10+OC inspection was conducted with the manager, Chrs S. The establishment is open and operating.Permit is approved.Please address the following items prior to the re-inspection:1. Repair/ replace the sprayer arm at the 3-comp sink. Sprayer hose is broken and spraying water onto the wall.2. Provide a vented dual check valve at the water connection point of the tea brewer. This is not a testable device, so replace it whenever it leaks or annually; whichever comes first.3. Certify the RPZ of the soda carbonator and provide report.4. Cap off the drainpipe and water connection of the old ice machine.5. Replace the acoustic ceiling tiles directly above the soda fountain machine with washable ceiling tiles.6. Clean plumbing fixtures (i.e. faucets, handles, back of the sinks, sink’s bowls,etc.)7. Clean the steamers, hot holding wells and containers. 8.
