Observed diced and shaved ham in the top cooler line with internal temperatures of 50*F when measured with a probe thermometer. Observed various meats and cheeses in refrigerated drawers with internal temperatures ranging from 52-55*F. According to manager, all items had been in units for less than 3 hours. All items were moved to the walk-in and put on ice to rapidly cool. All TCS food must maintain internal temperatures of 41*F and below. Corrective Action: Corrected at time of inspection.
