Observed Bruschetta board mix 1/19 and pico mix 1/20 both containing cut tomato in the first cookline reach-in fridge, PIC stated items were old containers and had been refilled. Inside walk-in fridge, observed almond milk dated from 3/19/24, pinto beans 1/15, vegan taco mix 1/22, and vegan chili no date. Pic stated items had been pulled from the freezer between 48-24 hours ago. Discussed re labeling and account for the 7 day maximum hold time after thawing. Bar glass reach-in fridge almond milk, soy milk, and oat milk undated. Staff redated all items to reflect correct dates. Corrective Action: Corrected at time of inspection.

Observed the dishwasher with a chlorine concentration below 50 ppm. The dishwasher is pulling chlorine but is not properly calibrated. All dishwashing machines that utilize chlorine sanitizer must have be properly calibrated to 50-100ppm in order to sanitize food contact surfaces. The PIC indicated the diced tomatoes were in an older container and did not have the date corrected as well as the gravy was taken out of the freezer two days prior. All food must be properly labeled with the correct date 7 days including the date of preparation or when taken out to be thawed. The PIC corrected the dates on the containers. All TCS food products thawed and placed in a unit to hold at 41F or below, must have proper discard date 7 days after removed from freezer.
