Roasted kitchen in hot holding unit in service area is at 110 degrees F and chicken nugetts in hot holding steam in self service area at 99 degrees F. Chef stated the food items were in these two unit less than an hour and reheated them in oven and fryer to proper reheat temperature of more than 165 degrees F and returned them to the units and also increased the temperature of the two units. Corrective Action: Corrected at time of inspection.

Observed Deli case improperly cold holding cabbage/ tomato salad, chinese crunch salad, tuna salad, chicken salad, potato salad, pasta/tomato salad, black forest ham, polish ham, deli turkey, and provolone at 45-47*f degrees. Case was holding below 41*f degrees via min/max thermometer at time of inspection. Items moved to walk-in fridge to cool at time of inspection. Corrective Action: Corrected at time of inspection.
