PRIORITY VIOLATION-4-501.114, P: Manual and Mechanical Warewashing Equipment, Chemical Sanitization- Temperature, pH, Concentration and Hardness. Observed three compartment sink sanitizer to be heavily soiled with food residue at start of inspection. Had operator drain clean and refill sink and freshly dispensed sanitizer measured to be <150ppm. Bucket and bottle of sanitizer also measured to be <150ppm. Had operator drain sink, fill with water and manually add sanitizer to a concentration of 200ppm (within manufacturer specifications). Operator also remade buckets and bottles with correct concentration of sanitizer. Continue to manually dilute until dispenser has been repaired to provide correct concentration of sanitizer.
