Inspector's notes

Observed several portioned servings of cut watermelon, cantaloupe, and honeydew melon stored at room temperature in the server's area, with an internal temperature of 60F, probe thermometer, verified by PIC. According to PIC, the cut melons are stored on the counter at room temp for breakfast service. PIC discarded the melons, see embargo form. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Bacterial growth and/or toxin production can occur if time/temperature control for safety food remains in the temperature "Danger Zone" of 41F to 135F too long. Verified with person in charge's (PIC) test strips. According to PIC, the machine was recently serviced and the chlorine concentration is tested daily. PIC will have recently washed dishes rewashed, rinsed, and sanitized. The 3-comp sink will be used to sanitize all kitchenware until the chlorine concentration in the dish machine is at 50-100 ppm. Discussed checking the sanitizer concentration every morning and logging the concentration and necessary corrections before the dish machine is used in order to properly destroy pathogens on the dishes.
