Inspector's notes
Observed a plastic bucket of cooked chicken wings in under counter reach in with an internal temperature range of 47-48 degrees F per probing thermometer. Person in charge (PIC) stated the items had been in the cooler since the day prior. Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrective Action: Corrected at time of inspection.
