Predefined Comment: Discussed the importance of preventing bare hand contact with ready-to-eat (RTE) foods with the person-in-charge (PIC). Bare hand contact is not approved with ready-to-eat (RTE) food items. Predefined Comment: RTE food that was contacted by bare hands was discarded by PIC at time of inspection. After running the dish machine multiple times, the chlorine concentration measured at 0 PPM each time. Acceptable chlorine concentration shall be between 50-100 PPM. Establishment will utilize the kitchen dish machines to wash, rinse, and sanitize glassware and utensils until the upstairs bar dish machine is repaired and maintains a chlorine concentration between 50-100 PPM. At time of inspection observed bartender grab an orange wedge with tongs and place it on the rim of the beverage. Before serving the beverage, the bartender adjusted the orange wedge with their bare hand. Instructed bartender to discard the garnish and drink at time of inspection. Bare hands shall not come in contact with ready to eat foods. Use utensils such as deli tissue, spatulas, tongs, single-use gloves, or dispensing equipment when handling ready to eat food. At time of inspection observed two plastic wrapped packages of ice balls in ice intended for consumption at the downstairs bar. Packaged ice balls were removed from the ice at time of inspection.
