Observed 6 packages of frozen beef roast in crates sitting outside walk-in cooler being thawed. Discussed with PIC that thawing required to be done under refrigeration that maintains the food temperature at 41F or less or completely submerged under running water. Thawing raw animal food thawed portions temp above 41F is not approved.

Observed food prep of tomatoes being sliced on cutting board that was placed over the 3-compartment sink and next to it the wash well is filled with water, soap and dirty dishes. Discussed with PIC that all food prep required to use the designated prep-table and prep-sink. 3 compartment sink may only be used if no dirty dishes are in sink and sink is washed, rinsed and sanitized before use.

Observed cooked meat being hot held in hot wells with internal temperatures ranging from 90-130*F, Per PIC meat was placed in hot well less than 2 hours prior to inspection. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. Corrective Action: Corrected at time of inspection.

Observed various containers of cooked meat in walk-in and reach in refrigerators with no dates, Also observed a container of horchata made in house with no date mark. Per PIC all items were made or prepped on 7/05 or 7/06. All RTE/TCS foods were properly date marked at the time of inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1).
