In the walk in cooler, observed 14 large containers of cooked penne with no date mark, 9 small containers of cooked chicken with no date mark, 9 large metal containers of cheese sauce with no date mark, and 1 medium container of gluten free pasta with no date mark. In the reach in under the front of house cold table, observed two large containers of cooked penne with no date mark, 3 small containers of cooked chicken with no date mark, 1 container of cut ham with no date mark, and 3 containers of cooked bacon with no date mark. Person in charge (PIC) stated items were all prepared on Sunday and Monday. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods were properly date marked at the time of inspection. Corrective Action: Corrected at time of inspection. PRIORITY VIOLATION-3-501.18 - Priority: Ready-To-Eat Time/Temperature Control for Safety Food, Disposition. PIC stated the cheese had only been stored as such for less than a half hour and moved it to another cooler to re-chill.
