Observed raw chicken, raw beef, raw pork, raw fish, tofu, cooked tapioca, cream cheese, bean sprouts, cooked rice noodles, cooked rice, and cooked potatoes in prep coolers and walk-in cooler at 44-51 °F. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held for four hours or more were discarded by person in charge at time of inspection. All TCS foods improperly cold held for less than four hours were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Repeat violation: 2nd. Corrective Action: Corrected at time of inspection.

The person in charge replaced the tongs with utensils of longer handles that want fall into the food and replaced the utensils in water with water 135F.
