Inspector's notes

Observed cherry cheese danish pastry from Noble being kept at room temperature in the display case to the left of the cashier. Internal temperature: 71 degrees F. Other pastries of concern are assorted muffins with frosting drizzled on top. Person in charge (PIC) states that the pastries sit out in room temperature all day. Comprehensive ingredient list could not be provided at time of inspection. Informed person in charge (PIC) that pastries with TCS ingredients and fillings should either be: 1) kept cold, OR 2) kept on time as a public health control (4 hour max if no temperature control) PIC corrected at time of inspection by time stamping product for 4 hours (product was put out 3 and 1/2 hours ago) and establishing a time as a control policy. Corrective Action: Corrected at time of inspection.
