Observed employee leave kitchen establishment to go outdoors and return to assemble food without first washing hands. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks.

Inspector's notes

Observed employees cooking hamburger patties from a raw state on outdoor grill without a handwashing sink available. According to PIC, hamburger patties were leftover from their fall festival on Friday 10/25 and had the intent to serve hamburger patties to students as an alternative option for lunch. Internal temperature of hamburger patties was at 165*f at time of inspection, but food handler did not have a thermometer available outside. After cooking hamburger patties, they were stored on grill in aluminum container with an internal temperature of 120*f prior to bringing them to kitchen for hot holding.

Observed cooked hamburgers stored in upright reach-in warmers with an internal temperature of 120*F. According to PIC, hamburgers had been removed from grill 5 minutes prior to inspection and was instructed to re-heat for 15 seconds prior to hot holding. Also, observed hamburgers patties being held hot on outdoor grill with an internal temperature of 120*F. PIC, was also instructed to re-heat beef patties to 165*f for 15 seconds prior to hot holding.

Gluten free food temperatures are not documented when received from catering company. Discussed importance of receiving temperatures to ensure food is received below 41*F.
