Observed side salad, yogurt, deli sandwiches, cream cheese carrot cake, pico de gallo, salsa, and string cheese on serving line and teacher serving area with an internal temperature of 48*F-50*F. According to PIC, items use time as a control but were not documented on time as a control log of when it would be discarded. PIC added items to log at time of inspection. Discussed importance of selecting time or temperature as a control for food safety.

Observed spicy chicken sandwich in steam table with an internal temperature of 120*F. It was determined that the cooking temp of chicken was accurate, but would drop in temperature once wrapped in foil. Discussed putting it back into the hot case after being wrapped in foil to help foods maintain temperatures above 135*F before placing on steam table for service. Items were removed and re-heated to 165*f. Correct By: Corrected At Time Of Inspection

Observed cold salads with an internal temperature of 53*f. According to PIC, time as a control is used for cold TCS foods but could not provide accurate logs that indicate time as a control is used. Logs being used indicated temperatures must be maintained below 41*F for cold foods and if not, a corrective action must be submitted. Reviewed several logs and found more accurate one to indicate time as a control is used and food is discarded at the end of lunch. Please use correct logs. Correct By: Corrected At Time Of Inspection
