Inspector's notes

At sushi station, observed sushi knife with visible accumulation of food debris. Sushi bar PIC stated that cutting boards and sushi knife had not been washed rinsed and sanitized since 7am. Inspector asked if they had in-use sanitizer buckets to clean knife and cutting board in between shifts. Chef stated they only use a rag with water. Cutting boards removed and washed, rinsed and sanitized at time of inspection. Corrective Action: Corrected at time of inspection.

All cold TCS foods had internal temperature of 41*f and below, using a probing thermometer. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection.

After pH meter calibration, acidified rice had pH of 3.5 -3.6. Ideal pH range for acidifcation of rice is 3.9-4.3 to be in compliance with variance. Provided training to employees, to ensure proper rice and vinegar measurements are occurring. It was determined that employee was adding double the amount of vinegar that is required for proper acidification.
