Observed grilled corn, gravy, macaroni and cheese, potatoe wedges, chicken tenders in steam table with an internal temperature of 110*F. According to policy posted on equipment, time as a control is used for food safety and requires that hot foods are discarded within 4 hours, and baked chicken within 2 hours for food safety. Documentation was not provided at time of inspection to show when food was removed from temperature controlled environment or when it will be discarded.
