Instructed person in charge to discard. Reviewed hot holding, reheating and cooling processes with person in charge.

Observed ice crystals hanging from the cooling unit in the freezer. Catch pans had been placed directly below and not open foods were stored under the ice crystals. Proper repair of the unit is required. Physical facility must be maintained in good repair at all times. Repair physical facility prior to next routine inspection. Also, discussed hard jacketing the clear soft pipe leading from the walk-in and freezer to the floor drain to better maintain a required 1-inch air gap. Corrective Action: Correct prior to next routine inspection.

Inspector's notes

Observed cooked wings (72-76°F) cooling on a cooling rack out at room temperature. Staff stated the wings had been cooked for their first cycle around 1.5 hours before temperature measurement. Wings were immediately moved into the walk-in to aid in ACTIVE and RAPID cooling. Discussed keeping temperature logs to identify when items start the cooling process. Time Temperature Control for Safety (TCS) foods must cool from 135°F to 70°F within 2 hours and from 135°F and 41°F or less within a total of 6 hours. Corrective Action: Correct prior to next routine inspection.

Establishment must be cleaned frequently enough to prevent the accumulation of dirt, organic matter, and food debris. Must clean prior to next routine inspection. Core-6-501.11, C: Repairing-Premises, Structures, Attachments, and Fixtures-Methods Observed ice crystal build up underneath the cooling unit, in the freezer, which was dripping down onto sealed packages of food below. Alerted the manager and discussed protection of foods and maintenance requirements for freezers. No direct contamination was observed. Establishment to manage the leak and ice crystal build up from the cooling unit. Staff to avoid placing open foods directly below the cooling unit. Staff to cover foods promptly once frozen to help protect food from possible contamination. Establishment to have the freezer serviced to reduce leaking, before the next routine inspection.
