All adulterated flour was voluntarily discarded by Person in Charge (P at time of inspection due to contamination from small bugs. Discussed increased monitoring of flour for signs of contamination. Corrective Action: Corrected at time of inspection.

ALL TCS items such as bean sprouts and leaf lettuce were recently re-stocked in the refrigerator within the last hour. No food was discarded. Refrigerator is required for flow of business and will not be used until in good repair and able to maintain food temperatures at or below 41 degrees F. Observed prep refrigerator near kitchen entrance measuring with an ambient temperature of 47-56 degrees F (differed from top and bottom portion). Some TCS food such as various cooked meats measured with internal temperatures ranging between 46-60 degrees F. These items were recommended for discard. All other TCS items in the unit measured at 41 degrees due to recently being stocked. Corrective adjustments were made to the unit at the time of inspection. Unit was 41 degrees before inspection concluded. Discussed cold holding.
