In the walk-in refrigerator, 5 stacked and covered pans of goat curry measured with internal temperatures ranging from 48°F to 56°F. Per PIC this item had been prepared the evening before the date of inspection and placed into containers to cool. These items did not meeting cooling requirements of achieving a drop from 135°F to 41°F in 6 hours or less and were recommended for discard. Reviewed cooling techniques including loose fitting lids or plastic warp covering and placing small portions on one level rather than stacked.
