In the crepe prep refrigerator observed multiple containers of ready to eat TCS foods without a date mark. Observed containers of caramelized onions, goat cheese, pizza sauce, cooked chicken, and sliced ham with no date mark label. After discussion with the person in charge it was determined the caramelized onions, goat cheese, and ham were prepared or thawed on 8/17/25 (Sunday). According to the person in charge the pizza sauce and cooked chicken were prepared or thawed on 8/16/25 (Saturday).

Observed in the sliding glass portion of the walk-in cooler a container of raw, unpasteurized in-shell eggs being stored above ready-to-eat pastry fillings and a container of milk. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Inspector's notes

Observed in the prep table cold-holding unit a container of sliced ham at 48°F as measured internally with a calibrated probe thermometer. Per PIC, ham had been in the unit since the previous day. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Discussed not stacking containers in the prep table unit, as items stacked on top may not be able to maintain a temperature of 41°F or below as to prevent pathogenic growth. Corrective Action: Corrected at time of inspection.
