The dish machine had lost syphon of sanitizer and a new sanitizer supply was connected and primed. Food container and lids were rewashed and sanitized in the dish machine with appropriate concentration of Chlorine sanitizer. PIC was unsure of when the bag was opened but stated policy is to keep the bag for no more than 2 days once opened. PIC voluntarily discarded the beef.
