Observed Ready to eat (RTE) shrimp with date of 7/18, and commercially processed ready to eat roasted chili peppers 7/20 in walk in cooler. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Advised staff to check dates at the beginning of work shift. Corrective Action: Corrected at time of inspection.

Inspector's notes

Steam table nearest warewashing area had multiple TCS items including melted cheese, beans, and cooked meat, measuring an internal temperature of 92-107'F. Items had been placed into table <2 hours prior. Chef took all food out and back to stove to reheat to 165'F. Water bath was found not to be properly holding temperature. Person in charge will ensure that unit is able to properly hot hold food before placing anything back in. TCS foods shall be held at 135'F or higher when hot holding. Corrective Action: Corrected at time of inspection.

Per person in charge all food had been reheated on stove to 165'F and placed into steam table around opening, approximately 3 hours prior. Person in charge had kitchen employee take all foods out of steam table and to stove to begin reheating. Temperature of steam table was also turned up to ensure that food would be held at a minimum of 135'F when placed back into it for hot holding. Correct By: Corrected At Time Of Inspection
