Observed chicken wing (drums) in walk in cooler with temperatures of 44-47*F. As per the person in charge, the morning prep staff finished cooking the wings arounf 8-815am. Wings were checked more than 6 hours after preparing. Cold hold of food is to be 41*F or lower. Advised staff to verify wings have cooled to 41*F prior to covering and labeling. Wings were embargoed and discarded. Observed Pico de Gallo and sliced tomatoes in prep cooler across from grill at 55-57*F. Items were embargoed and discarded. Corrective Action: Corrected at time of inspection.

Sanitizer bottle was found to be empty. Sanitizer was replaced, dishwasher primed and run again. Chlorine sanitizer concentration tested at 100ppm after running again. Discussed with person in charge frequency that sanitizer concentration is verified at bar. Person in charge will ensure that dishwasher is tested at least daily.
