Observed sausage, chicken, ham, bacon, cheddar cheese, and parm/asiago cheese in the top of the make-line unit ranging from 45*F to 48*F using probe thermometer, verified by person in charge (PIC). PIC stated all of the items came from the walk-in and were placed in the unit less than 4 hours prior to inspection and relocated to the walk-in to rapid cool. Corrective Action: Corrected at time of inspection.

The ingredients are used for the preparation and delivery of pizzas to schools that participate in the "Smart Slice" school lunch program offered by the establishment. A food processor permit must be obtained in order to process food for resale. Please apply for the food processor permit within 5 business days. NCIR emailed to owner and GM of the establishment.
