Maricopa County requires all establishments that serve open food, which requires time/temperature control for food safety, to have at least one certified Food Protection Manager (CFPM) on staff. Observed regular and foot-long hot dogs and raw beef patties cold holding in the bottom of the upright refrigerator near the deep fryers with internal temperatures of 45-46F, probe thermometer, verified by person in charge (PIC). According to PIC, the hot dogs and beef patties were stored in the refrigerator and were at 41F or less within the previous 2-3 hours. Discussed monitoring the temperature of the refrigerator to ensure that the air is circulating properly. PIC placed into the walk-in cooler to rapidly cool to 41F or less. Discussed the importance of maintaining cold food at 41F or less to limit pathogen growth and avoid causing foodborne illness. Except during preparation, cooking, cooling, or when time is used as a control all TCS food must be maintained at 41°F or less. Corrective Action: Corrected at time of inspection.
