Inspector's notes

Observed 0 ppm chlorine sanitizer in the dish machine in the back of house. Chlorine sanitizer should be between 50-100 ppm to ensure the dishes are properly sanitized. The chemical bottle was changed, the machine was primed, and it still did not test. The 3-compartment sink was set up and will be used until the machine is serviced by a technician. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed cheese sauce in hot holding near the fries with a temperature ranging from 125-98*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. The PIC stated the cheese sauce was put into hot holding around 9:20am and voluntarily discarded the cheese sauce. Discussed hot holding/reheating procedures with the PIC. Corrective Action: Corrected at time of inspection.

No signs of leakage. Person in charge moved items to bottom to prevent contamination.
