Inspector's notes

Observed a walk-in refrigeration unit with a warm ambient temperature. Internal temperature of TCS food items taken with internal probe thermometer registered between 43-50*F. TCS food items include: deli salads, cold fried chicken, cooked BBQ ribs, cooked chicken wings, roasted turkey, shredded chicken. Per PIC most food items were cooked two days ago, placed within the refrigeration unit to cool, and repackaged for resale as cold product. Educated PIC that except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were discarded by PIC at time of inspection. Corrected at time of inspection.

TCS food items temped with internal probe thermometer registered between 43-50*F. Cold holding equipment must have the capacity to maintain TCS foods at 41°F or below. Must repair cold holding equipment such that it maintains TCS foods at 41°F or below. Correct prior to 24hr re-inspection.
